Cornmeal Fried Oysters with Blue Cheese Dressing

Ingredients
- 1 Cup mayonnaise
- 4 Ounce blue cheese, crumbled
- 1⁄2 Cup sour cream
- 1⁄4 Cup buttermilk or regular milk
- 3 Tablespoon rice wine vinegar
- 1 Dash worcestershire sauce
- 1 Quart fresh oysters, shucked
- Each vegetable oil, for frying
- 1 Cup cornmeal
- 1 Cup instant cornbread mix
- salt & pepper, to taste
Preparation
Mix mayo, cheese, sour cream, milk, vinegar, and worcestershire sauce together. Cover and chill.
Heat a cast-iron skillet or thick bottom saute pan. Add enough vegetable oil for a shallow fry (about 1-1 1/2″). Mix the cornmeal, cornbread mix, salt and pepper in a wide shallow bowl. Remove oysters from shells and liquid and roll each in cornbread mix, coating well. Fry oysters in hot oil and drain on paper towels or a rack set over a sheet pan. Lightly salt each oyster and serve hot with homemade blue cheese dressing.
